So If I put my car in neutral, rev it to 3k ish and hold it seems like a lot of steam comes out of the exhaust and a little bit of blue(valve seals right?). Is this normal, or what could it be?

It looks normal to me its just normal steam comin out the pipes. It is getting colder in IL somewhat colder in Carbondale and its normal. Just wait for it to warm up it usually goes away. Its nothing to worry about.
