do u have a/c if not dou have the a/c fan hook it up to switch and flip[ it on whenever the temp get too hot also if it was a head gasket check compression also check oil if oil is low then it will overheat easier, flush coolant, maybe u should header wrap ur exuast manifold see if that helps running with out atherostat is bad there would be no pressure in the cooling system so i wouldnt be able to cool properly so try that stuff but FLUSH the cooling system for sure

Yeah I've thought about the head lifting under boost, but tomorrow I'm going to get the coolant flushed, heat wrap the manifold, change the thermostat (I guess I should get a cooler one right?) and maybe add another fan if it's needed. I will check the compression as well, but would that determine a head gasket problem even if it's just a small leak? So far today driving, no heating issues, no sign of leaks either so hopefully it's not the head gasket. For what it's worth here are some pics of my radiator, rad fan and basically where everything is positioned. If this helps anyone, great.
In this pic the intercooler is on the bottom left and you can see the fan sort of right behind it. This is from inside the engine bay...see you can tell because you can see through my front grill.

ok so now that your done with the circles these idiots have been running youin grab a coolant pressure tester and check with that if it holds ressure you have no leak if you loose ressure you have a leak but some times the intake mani gasket will leak and you styill wont loose pressure the head gasket you will loose pressure
im assuming if you are going through coolant than its a intake gasket if not take the tstat out i have none and mine is fine the temp just comes up slower
best way to bleed the coolant is start teh car with the rad capoff and fill accordingly
so lemme know if you have issues after this

also, I have never seen coolant leak through intake manifold gasket. If it is, wouldn't you think that coolant will get inside the combustion chambers and create an even more low compression rather than overheating?? Idiots, us, I don't think so. when you lose a little coolant and there are no leaks, most likely the head is warped, not usually the head gasket. Fine, you want to get more techical, I will! Go to NAPA and buy a block checker, start engine, let it idle, put the fluid in the block checker, if the fluid turns greenish yellow, then your head is warped or a bad head gasket.

Well today I had my manifold wrapped, they dont think it's the head gasket, so thats good, but I think there's an air pocket in the coolant. Having a dump tube made and since there was a small exhaust leak near the manifold, I'm having that fixed as well. So the other thing to check now is to see if the head is warped.

i remember saying to just install ur new thermostat and PROPERLY bleed the coolant system.

Yes I know you said that, but I don't have tools here to do anything, I do have some friends who are mechanics but one of them broke his arm and the other smashed his thumb with a sledgehammer and that broke in 3 places, and besides I had some other things needed to be done along with the cooling system. And I really need to brush up my mechanical skills and I'll be the first to admit that

well seince you obviously dont know how to bleed coolant the best way and you have never seen the coolant leak im speaking of on the intake manifold ills explain
most of the ti8me it only happens on boosted apps butits not actually into the combustion chamber at all no way it could be on the passanger side of the intake mani on the lower side tehre is a coolant passage the gasket will break there and will not usually leak more just release pressure allowing teh coolant to boil
