I'm rebuilding my engine and about to send the head away to get it machined. What kind of things should I make sure they do, and how much do you think it will cost? I got quotes anywhere from $250-$750.

Please be more descriptive in your objective for this head. Are you rebuilding the head for performance or just to recondition it to "like-new" stock specs?
Recondition to new-stock
- resurface/deck the head (mating surface)
- valve job
- new valve stem seals
- have them check your valve springs for compression (replace any, if needed)
Performance (do everything listed above, plus..)
- can do a more complex valve job (more angles/polishes, etc)
- upgrade valvetrain (valve springs, retainers, valve locks)...typically if you're running a higher RPM cam or will be in the higher RPMs than what stock can do
- port & polish work (price varies depending on your source & the quality of their work)
- milling the head (added compression)
- chamber work (added compression, more efficient burn, better air flow)

Sorry, should have been more clear about what I meant.
Well I blew a chunk out of one of my exhaust valves, so I pretty much have to rebuild the engine. Right now seeing as I have everything apart I would like to do some performance upgrades without getting too caried away(don't want to spend too much). Nows the time to do any work I want done.
So I'm getting all new valves, that much I do know.
How much would getting a more complex valve job cost? Would that just make the air flow more smoothly in?
Also if I were to up the compression would I need to do any other work to the engine? How much compression can a stock block handle?

If you're looking for a lower-end performance upgrade regarding the head. I'd personally do the following:
- new valves (aded...only because you're set on doing this)
- standard 3-angle valve job
- new valve stem seals
- have all valve springs checked for compression (replace any if necessary)
- resurface/deck the head and/or mill it like .020" (up to you)
- send out your stock cam for a Delta regrind (www.deltacam.com) < good bang for buck
- a more complex valve job is not worth the money for your budget

thanks for the help.
I'm pretty sure the old valve just burnt through. My valve stem seals were leaking before. I put some oil sealant stuff in, which sucked, maybe that had something to do with it.
As for replacing the valves, I'm pretty sure I should do this as one of them already burnt through, and for the $120 its gonna cost me its probably worth it.
How much compression will milling the head to .020" result in? (is there a formula or something).
I am going to get the cam reground, (would you recomend 272 grind?) but I live in Canada
I'm also going to get my throttle body bored out a little bit.
