cant get an accurate oil reading?

so i am trying to read the oil when the car is cold and the oil always comes up at around the knub of the oil stick.

last time when my car was fully warmed up and i tried to read it (w/ car off of course) the oil will just be all over the stick so i added half a quart and when i did my oil change...i drained like 5 quarts which is way too much.

do you think i should just changed it? what also makes me mad is that my plug tube seals are still leaking even though i replaced them
i mean...i have four quarts of castrol gtx sitting in my garage.

usually when i check it, i do it a couple of times to make sure i didnt see it wrong. The first time you check it after shutting off the motor wont give you an accurate reading obviously so a couple of times should give you an idea.

And also make sure the car is straight and not on a incline when checking the oil.
