More and more I'm thinking it is the sensors Fleetwood mentioned. When mine went out the "brake lamp" light just stayed on constantly. Could be that yours is going intermittently.

Whenever I hit the brakes hard, it lights on, and whenever I am parking the car on a slope, be it up or down, I hear some noise whenever I lift my foot off the brakes !! ... it sounds like you're opening an old door or something.

could mine still have air in the system. According to the manual the sequence is:
rear passenger, front driver, rear driver, front passenger, is yours the same ?!
The noise is probably not too big a deal. I think it is just the weight of the car putting pressure on the e-brake. Try pulling the e-brake up a little harder and see if it makes less noise.
