What they do is build a history of your engine, and track the different elements in the oil.
For instance, let's say you have been doing this for year, and then all of a sudden you see a huge increase in zinc and lead content. That might indicate sudden bearing wear or failure.
It isn't as easy as testing the oil and saying "your engine is healthy" especially since every engine wears differently. With one test, the could see if there appears to be an abnormally high concentration of something, but without the history it is more of a conjecture.

There are only like 3 labs in the nation that even do this testing, and airplane engine oil is subject to the same stuff as car engine oil. But since an overhaul is going to run you anywhere from abou $20K-100K for a piston engine, and 3-10x that much for a turbine, it is cost effective to keep track. Especially, since most people would like advanced warning about impending engine failures.
