.) If you use cheap coilovers and stock shocks, then YES... you will get LOTS of bounce Most people don't want that, so they spend more money on the expensive stuff. IF you actually want that, then go for the cheap stuff. If you drop really low though, you'll probably blow stock shocks. I know someone on KYB GR2s (fairly cheap) that is pretty low... and he hasn't blown. That's an option for when the stockers go out.

.) Some kits allow for instant adjustment when the car is down. However, if the car is too low for you to reach to the coilover to adjust it (like my 86 hatchback was) then you'll have to jack it up.
That cheapie kit there will probably give you the bumpy ride you're looking for... Definitely not quality, but it'll work. At least for a little while. Only if you're going for looks though! You'll gain absolutely no handling advantages by getting those.

.) A bumpstop is the small rubber piece on the shock piston (if you can call it that). It's purpose is to keep the shock cylinder from whacking the top too hard when you fully compress the shock. When you lower a car, you have to cut the bumpstop or then shock won't have enough travel. Not a big deal.

.) As far as I know, there is no strut boot... ust a dust shield that you will probably remove.

.) I'm not sure on the rubber rings... I suppose they go on top and on bottom of each coil...
