get a carbon fiber hood, that saves like 40 lbs. the A/C compressor weighs 55lbs so if you dont need A/C get rid of that. A DC ceramic header will definitely weigh about 10lbs less than the stock cast iron one.

The heavy things under the hood are obvious. Power steering needs to be looped, though... or you need to get a manual rack. Otherwise you'll dry out your rack.
AC, PS, any unused brackets, heat shield (a ceramic coated header, or a wrapped header, helps keep temps down)
You can also get lighter parts, as mentioned before.
