anyone in socal get new rotors and pads at the same time? I got them a year ago with the new tires but never bedded them. do you get problems for leaving the brakes unbedded?

It really depends on what kind of pad you are using. Most street pads there won't be an issue, but on race pads it'll make a world of difference.
